of us had sake first served to us in the early days
Japanese restaurants in the United States. It was
served warm in a tiny carafe with little ceramic cups.
Alongside it was a plate stacked with tempura, the
Teppenyaki chefs twirled their knives and you sipped
it thinking what brutal culture is this which drinks
such liquid redolent of gym socks! Then one day, someone
offered you a really good sake, too good to heat up.
It was delicate and subtle, fruity and pure.

world.
